Of 23 ferrets, I've never had one even chew on beef, raw or cooked, when I put it in their mouths. They have all liked raw poultry, though. I do not feed all raw, because it gets expensive with as many as we have, but if you go that way, the diet needs to be well balanced.
We do feed raw in soups, but still free feed kibble. EVERYONE loves the soups, which have ground raw turkey or chicken and ground kibble. At least this way they get raw as well as soft food which is better for the teeth. But since I don't feed only raw, the kibble balances out the nutrients they need.
I've had at least 5 ferrets at a time since 2009, and never had the time, money and patience all to once to get all of them on raw at once. But if done right, it's best for them. I originally started making them soups with the intent to get them on raw, but more and more ferrets kept showing up. It did take a couple tries to get them to even eat soup.
